The failure to uninstall Chrome due to crashing is this bug: http://code.google.com/p/chromium/issues/detail?id=1215
You can work around this by downloading and installing the latest dev channel version (153.1). At that point you should be able to uninstall again. Sadashiv's suggestion of booting into safe mode works as well since it prevents the crash from happening in the first place.
