Another way to still use profiles (even when the ctrl-M function is
gone I guess):
Make a shortcut, for example on your desktop to:

XP: C:\Documents and Settings\<username>\Local Settings\Application
Data\Google\Chrome\Application\chrome.exe --user-data-dir="..\User Data
\<profile name>"

Vista: C:\Users\<username>\AppData\Local\Google\Chrome\Application
\chrome.exe --user-data-dir="..\User Data\<profile name>"

When you use a non-existing profile name, the profile will be created
when you open the shortcut.
