That's odd. Are you using the developer version or the standard
version? Profiles are only available in the developers version which
can be downloaded here:

http://dev.chromium.org/getting-involved/dev-channel

Assuming you have versions 2.0.167.* or higher then you should have
access to profiles feature if you add "--enable-udd-profiles" to the
end of the target string. Maybe you only put one "-" at the beginning
of "enable" instead of two "--".

Give it another try.
