Hi Pat, I've never done this and I don't even own an iPad, but I will try to help anyway. I see that there are OSC/Midi controller interfaces available for iPads. ChucK can accept control input in these forms. I'd probably start with a small computer running Linux and a ChucK OSC listener, then use the iPad over WiFi to control it. Apple's app store doesn't seem to be searchable from the web, so I can't comment on "ChiP".
