There are no *sane* defaults. For end-users MPEG-4/mp3 might be ok, although H.264/AAC is much better. Professionals will rather use some uncompressed format (like the yuv2 you tried), which might not be supported by MPlayer though. I saw MPlayer crashing on professional formats (sane ones!) several times.
