For the first two no, for the last three if they are using DNS on those things then yes you will need to update them. For the gateways, look at your MGCP/SCCP/CCM-Manager configs if they have hostnames in them and/or a sh ccm-manager shows hostnames, you will need to update for sure.
For the handsets that would go along with DHCP, DHCP would be handing out DNS, if you can run both DNSs in parallel for a bit you can just update the scope and all will get it at the next lease update. If not you'd want to schedule a reset in order to force them to pull the new data.
