You're going to want "show log | i INVITE sip:" to get request lines, otherwise you'll also get other Headers which contain the word INVITE. E.g., the Cseq Header.
But yes, I agree that viewing SIP message traces inside of IOS is painful, and it's always better to pull the information out and view it offline. Even if it's just Notepad++. It would be nice if Cisco had some specific SIP show commands, like how we have show call active|history, maybe we could get show sip call active|history [call-id], or something like that.
