What are the  major
differences b/w EIGRP and OSPF aside from the fact that EIGRP is Cisco's ?

for starters one major diffrence
eigrp routes desktop protocols and ospf does not (ip only)

Why would one use EIGRP over OSPF and vice-versa?
I would use ospf in a network that involves many ,many routers and scales across the country or the world

I know that EIGRP uses bandwidth as it's metrics and OSPF uses cost but
which one is a better metric?

cost and metrics define the same thing reachability to a distant network. My opinion is that eigrp metrics are better due to it's metric involves more variables to calculate it's cost.
