Dale,

You can use only two Ethernet interface to do labs.  There is no different
if the interface is a serial or Ethernet.  You can still route through it.
Just connect it to another Ethernet port on a different router.

You can even make it into a three or more interface with loopback.  Then use
extended ping to ping from that address.  It is great way to practice
different routing protocols.
