Should be no problem. Set the ip helper-address on the remote routers to the internal
DHCP server at your central site, and as long as those routers know how to get to that
IP address (for example, via a default route that goes through the VPN tunnel) and as
long as the DHCP server's default gateway knows how to get back to all those remote
offices (via their VPN tunnels) then you should be fine.
Disclaimer: I've never actually tried this, but it certainly seems like it should be
possible as I described...
