For VoIP, I would recommend Cisco Press, "Cisco Voice over Frame Relay, ATM and IP" by Steve McQuerry, Kelly McGraw, Stephen Foy. For ATM, I would use Cisco Press, "Cisco ATM Solutions" by Galina Diker Pildush, Chapter 9 is the most you need to know for the lab test. For IPSEC, I would use McGraw Hill, Implementing Cisco VPNs, Chapter 6 is the most you need to know for IPSec.
