I'd recommend a couple of 2600s with NM-1Vs and FX-S cards.  That's what I
used for my lab.  I used a 2610 and a 2620 each with NM-1Vs and VIC-2FXS
cards.  I then also used the 2620 for ISL trunking.  I'd recommend a couple
of 2610s with 64D/16F (so you want have to worry about memory/IOS issues).
You could probably get away without owning hardware for ISL trunking.
