Good idea. I haven't written any yet for our labs, but we specifically upgraded equipment to do so. The "gotcha" is the router has to be able to support CEF and some related features, which would up excluding the 2500 series. We had to change to 2600 and 3600 series to be able to do it. I've got a QoS tutorial due out in May, which will be part of a series. Probably the first two will be QoS without MPLS and the last one with MPLS.
