Sounds like a terrific idea, especially the part about focusing on productivity rather than theory. From what I understand those are the types of books that are selling also, i.e. the shorter, to-the-point books that provide sort of cookbook approaches to installation and optimization.
The class must be hands-on to meet those goals, so you would need equipment and processes for cleaning up the equipment between classes, etc. The real question you need to ask is whether there are enough network engineers at this level where you live. Travel budgets are tight. Do you live in a reasonably high-tech area where local people would attend? (I don't. I have offered a couple classes like you mention in Southern Oregon, but it's hard to get an auidience. Heck, there's probably only a handful of Cisco routers in the entire area!?) I would say keep your expectations low, due to the horrid state of the economy, but go for it.
