The currency is stored in the $l_currency variable in the language file.  You can duplicate the file /include/local/us-english.inc.php, name it to whatever you like for south africa, something like za-english.inc.php and then edit the l_currency line and any others in there you want to and put it inthe config.inc.php as the $lang variable.
