As Susan says, chocolate can be fatal to dogs, even in small
quantities.  It contains theobromine (a compound similar to
caffeine) which is poisonous to dogs.  Theobromine, when
ingested, causes release of epinephrine (adrenaline) which
causes the heart to race and serious cardiac arrhythmias to
develop.  Signs of chocolate poisoning in dogs include
vomiting, diarrhea, excessive urination, and hyperactivity.
Followed by depression and coma, seizures, and ultimately,
death.

Although a Cavalier would probably have to eat 8oz of milk
chocolate to get a toxic dose, one ounce of unsweetened
baking chocolate would usually be fatal. The other problem
with dogs eating chocolate is that a lot of it is high in
fat, and dogs often get enteritis or pancreatitis.
