Both vets were right.  If the result is in nanograms per ml, then Monday was
the LH surge, as it is the day before the progesterone goes approximately
above 1.9-2.  So Monday was Day 1.  The best breeding days are usually days
5 & 6 (Friday & Saturday), with the next best being 4 & 7.(Thursday &
Sunday).  Better to error on the early side than the late, as sperm can live
over a week if conditions are good, so Thursday is an ok choice to start.
So you would have caught the bitch with either the Thursday and Saturday or
the Friday and Saturday breedings.  As long as you bred by Saturday, you
should be fine, and even a Sunday breeding might have caught her.  In normal
circumstances, it only takes one correctly timed breeding -- I have done
only one breeding and ended up with seven puppies.  The other breedings are
just for insurance that you've caught the right time, in case there is some
problem with sperm longevity.

As an aside, I will tell you that some vets recommend doing another
progesterone a few days later, to make sure that she proceeded to ovulation
(about 5ng/ml), but a normal bitch will usually always proceed to ovulation
once the LH surge takes place.   A bitch with an inadequate surge may take
longer, or not proceed at all.
I don't bother getting a second one after it is above 2, but I might if it
was a bitch with fertility problems.

The other nice thing about knowing the LH surge is that it generally tells
you your due date.  Counting the LH surge as day one, the due date should be
on day 65; it rarely varies more than a day on way or the other.  Knowing
this can save you some sleepless nights.
