too many freckles, ticking or a "off" nose in winter, will we praise the
person for being honest or think they are an idiot for not knowing better?

I always praise a dog that has too many freckles or ticking or an off nose
in winter--IF it is otherwise a good dog. Markings/color are the least of
the faults in my opinion. However, not many dogs are good--with or without
the *color* faults. I see way too many *Italian Greyhound* mixes in my
area--those leggy, finer boned Cavaliers with longer, snipier muzzles. And
really hate when the judges pick them and tell me my dogs have too short of
legs and too much substance!
