Our very first Cavalier, Azorese Mary Cochran, was overshot a quarter of an inch at eight weeks of age. She had a scissors bite at eleven months of age. That's the worse case that I have ever seen that corrected itself. However, Mary was from an outcross breeding and her bite developement change never happened in any or her descendents.
One thing that we've had happen twice in the last few years is a scissors bite at eight weeks that went badly undershot. Nasty to happen when you saved what you thought was the best pup from an important breeding and placed the rest as pets. The correct bite goes off and the "undershot at eight weeks" sibling corrects. You end up with the pet and the pet owner has the best pup from the litter <sigh>.
