Quick and dirty...
Or you could find and install the relevant logwatch rpm for your distro, which will send you a daily e-mail with many statistics about your various system logs, including mail server activity. Try to get the most current version of logwatch, even if that means avoiding the RPM and looking for source.

By default, logwatch will give you plenty of information simply from your mail server logs. If you would also like it to monitor your clamav logs, see http://lurker.clamav.net/message/20041108.110923.6e39b584.en.html
