You'll find this discussed to death in the list archives.
It all depends on how you installed the older version - RPM or source.
If you installed from RPM, uninstall the RPMs. If you installed from
source, delete the files that were installed. You can find *ALL* the
clamav related files by doing:
find / -name "*clam*" -print
--
