Can you tie your problems up with particular mails from your logs ?  I've 
found Clam is very greedy on big MIME mails, as it stores the entire mail 
in RAM whilst extracting the attachments.

Like you I also found that message doesn't trigger the OOM killer, and I 
suspect you're going to say (as I also found) that if you don't put a 
softlimit on Clamd, then it can bring the machine down through eating all 
of RAM - please do tell me if I'm wrong here of course :)
