For those interested,
One work around that I have found is to install ClamXav http://
www.clamxav.com/ on my LOCAL machine, make a tar of the /usr/local/
clamXav directory - download that to the SERVER - untar It in /usr/local
I was then able to use /usr/local/clamXav/bin/clamscan with user root
without any problem.
I have proceeded that way because Developper Tools were not installed
on this server - which does not allow to compile any program on the
server… I guess another solution would have been to compile Clamav
with the right user // As suggested.
I don't know if there is any reason for Apple to provide us with old
"broken" programs - what a waste of time…
Thanks everybody for your help.

Edit the freshclam.conf and clamd.conf files and uncomment the
User or DatabaseUser entries; these files will be under /etc/
spam/clamav if you are using Apple's default location.
Please see earlier discussion - this is a compile time setting.
Whoever
built these binaries for the OPs system did it with --user=0 or some
other thing. The binaries will need to be recompiled, or he'll
need to
find a way to get a user 0 recognized by getpwnam.
To find who the run-as user is that was compiled into the binary, run:
$ strings clamscan |fgrep "get information about user"
dp
