I just wanted to close the loop on this for anyone else who follows in my 
footsteps.

Since upgrading to 0.103.5 I've not had any more problems with disk utilization 
seemingly increasing.

I check the test host in question and it didn't have the bullseye-updates repo 
enabled.

Added the following to /etc/apt/sources.list, then did a apt-get update && 
apt-get upgrade and now I'm on 0.103.5
