Marcos, I'm not sure how they disappeared, but you can reinstate them by following the instructions at https://github.com/Metaswitch/clearwater-docs/wiki/Installing%20a%20Chef%20client#upload-clearwater-definitions-to-chef-server. (Note that you didn't miss these instructions - we've just noticed they were missing and added them to the docs.)
Please let me know if this doesn't recreate the roles in the web UI, or if recreating them doesn't fix your original problem.
