You can indeed.

When Ellis provisions a subscriber, it picks a number at random from its pool 
of available numbers. To have different available numbers, run the 
create_numbers script 
(https://github.com/Metaswitch/ellis/blob/dev/docs/create-numbers.md) with the 
numbers that you want.

To provision a specific number, you can use the Ellis API �C you can see 
details of the commands at 
https://github.com/Metaswitch/ellis/blob/dev/docs/api.md#provisioning-specific-numbers.
