This same thing happens to me from time to time and also drives me crazy.  
Too easy to accidentally click one of the column headers when selecting a 
range of songs.  However, I have noticed that CTRL-Z does indeed undo the 
sorting.  Unfortunately it seems to also undo other playlist operations at 
the same time.  So if you already removed songs which played, they often 
reappear along with undo-ing of the sort fiasco.  However, I can usually 
find where playback left off and remove songs which were already played 
again, though you may want to note which song this was prior to CTRL-Z, 
since it seems to sometimes lose its place as well.  Worse case I resort to 
last.fm to see what my last scrobbled song was.
