I'm running into the same problem... Sorry I don't have a solution for you... I'm running on a MacBook Pro (macOS 10.15.7) and an iMac (macOS 11.1). I've tried a full library re-scan to no avail. The album, I'm trying to sort out is not available through the normal sources, so fetching the cover art fails and I loaded it from a jpg on my local hard drive. Is this similar to your situation?
