Assuming x86 platform,

64 bit: For when you don't need 'binary' blobs like nvidia drivers,
flash, etc, or wine.
64 multilib: Mostly 64 bit, but still has the 32
bit compatilibity layers.
32 bit: Your avarage linux distro, doesn't take advantage of 64 bits
processors.

Of course there are more subtle differences,
however these are probably the most notable
