The difference is that with Cent it assumes it can do PV, but selecting Other 64-bit you force it into HV.

Press ALT-F2 then run fdisk. Also I believe when you use PV mode to install there is no graphics. You will need to use HVM (Other) to do the install. Then you have graphics.
