Tim,

I'd look into updating your NFS server version - there was a known bug about 
NFS taking all the cache and ram last year.

If update is not helpful, experiment with 'sync' and then 'echo 2 > 
/proc/sys/vm/drop_caches'

I'd set cron and run few times a day, see if it helps.
