My personal favorite and the one I used the most on production servers is Postfix. Qmail is also another good one to use. Both are built with Security in mind and also with ease of configuration.... although I think Postfix is a little easier to configure and tweak then Qmail is but that is just my personal opinion :) I'm not sure about Qmail but I know Postfix supports various SMTP authentication methods. Postfix is also quite easy to use with Spamassasin, if you care about spam prevention and also Amavis for AV protection. Redhat also has a postfix rpm package and supports using it over Sendmail. You could install Qmail on Redhat too, but you would also have to download, install and configure daemontools for it to work.
