Can some-one explain this difference to me? How do you change what device that LABEL= refers to? Or is this just Redhat weirdness that is safe to ignore and do things the old way?

When you partition a hard drive, you have the option of setting a partition "name" if you will. This allows you to swap hardrives without dealing with /dev/hdxY type stuff. So if you were to partition that drive somewhere (a spare linux machine or something) and set the label as /home, you would have been able to plop it in and turn it on. It has been really nice when playing around with a few servers of mine...
