You're seeing this in your mail logs?  What server are you using (sendmail, 
postfix, qmail)?  Whatever server it is, do you have any of its anti-spam 
settings enabled?  It could just be your mail server doing its job, 
preventing people from sending spam to you from domains that don't exist.  
How about anti-relaying settings?  If you don't have the anti-relaying 
settings of your mail server enabled, it may be a clue that someone is, in 
fact, relaying spam via your server.  Check your log files and see if any 
mail is leaving your server in response to these  "unresolved" messages.
