I use Fedora Core 1 running Sendmail as my e-mail server. I chose Redhat/Fedora
because I have experience with Redhat systems on the server side, and I find
them quite simple to setup and use. I upgraded the system from Redhat 9.0 to
Fedora because I wanted to make sure that I had continued updates for the
product. I'm not sure if I will upgrade this current box past FC1, I'm hoping
that the Fedora Legacy Project will do a good job supporting old systems.
For my next system I am thinking of using Debian because Debain Stable sounds
like it is in fact really stable (considering all the testing that the packages
go through before they are in the stable branch). That and AFAIK Debian supports
old systems for a long time, and it is very easy to upgrade your system with apt.

I find that any system that uses apt is very easy to keep up to date. I would
say Suse, Fedora, or Debian. All these systems can use apt, and they are all
pretty good about supporting their systems.

If you want something rock solid, you might want to look at Debian. Suse systems
are very easy to work with thanks to Yast2.
