Debian and Gentoo are my favorites for Linuxes, and OpenBSD is a great little OS if you have something that I can do :)

Debian I use when I have a server, or a group of machines to keep up to date. Gentoo I'm using at home as my workstation, it's pretty good, does keep you on your toes about getting it installed. OpenBSD is what I use when I have one task that needs doing, and it needs to be secure.
