No problem. Putting stuff between round braces () invokes a subshell, which you can then redirect the stdout/stderr from to various different things like log files, other processes, etc.
it smells like a shell workshop is coming...

I've never done anything of the like before.
I _might_ be coerced, if I had some assistance and an opportunity to
attend some other workshops in advance, to see what kind of approach is taken, how much material will need to be generated / covered, etc.
