I believe Thunderbird will use lp, try changing it to lp-cups instead.
I would assme there is a problem with open office you received, you
should download and install the latest release from there web site and
try that.
You can install it as a user in your home directory so it should not
affect the current install.

I then tried to open an open office spread sheet and open office froze
again.
But other than that my printing and my computer work just fine.

cause the problems you are experiencing, you should setup CUPS and use

I can safely print straight text documents, but when I print email
messages, they print in large print and some parts of the message get
cut off.
Hower plain text documents still print properly.
If someone could send me a short pdf file I could find out whether pdf
files print properly after I save them.
