Jon, I sent an e-mail to Apple asking for advice, and I've pasted some of their responses below.
Dear Mike,
I'm sorry to hear that your computer was stolen from your apartment. Please note that iPod/iTunes synchronization is always one way: from iTunes to the iPod. You cannot transfer song files from your iPod to iTunes. Be aware that when you synchronize an iPod full of songs to an empty iTunes library, all of the songs on your iPod will be deleted. You can, however, keep iTunes from automatically updating your iPod, and manually update the iPod yourself.
The Apple CSR then provided some links on how-to update manually iTunes&iPods. But what really surprised me was the next comment. I'm actually very impressed:

I know how distressing it can be losing your purchased music, so I've made all of the content you lost available for you to download again, free of charge. Please understand that Apple does not offer protection against the loss of your purchases, so this is a one-time exception.
This was followed by a detailed how-to on getting the music back. As I said....extremely impressed with service, but not so with having to send a request for help in accessing my own content.
