I second that on VoIP. It'd be a great topic - TrixBox looks interesting.

I have two suggestions for topics I would personally like to see:

1) Port Knocking - I'd even be amenable to help present but I can't run the
show
2) VoIP - I think Simon or Peter should share their knowledge and experience

with regards to VoIP, there's multiple things that could be presented:
TrixBox, Ekiga, SIP and many more things that are related.
