Make sure that you enable all of the extra repositories (universe, restricted, and multiverse) and Thunderbird should be available to install with apt. As for your current issue, try typing 'thunderbird' on the command line and see if the application will load. If not, what error messages does it give you? If it does load, the .desktop entry may be pointing to the wrong locating. Edit it and point it to 'thunderbird' or alternatively, type 'which thunderbird' to find the actual path to the binary. It could also be the case that the directory you installed it to is not in your path.
