There is an expert mode that can be enabled that gives you console access. I messed around with it for a little while before I ended up loading XUbuntu. I then had a full "normal" install to play with.
I then used Ekiga and skype, as the video camera is supported under Linux. If bandwidth is an issue, I would turn off video. The Skype audio only stream is pretty efficient, I am not sure that you could do much better. None of this is "normal" so you should expect to have to learn something (ie. do some work on your own). If this does not interest you, then the whatever the eeePC does by default is your best bet. FWIW I prefer the keyboard on the Acer Aspire One or the MSI Wind. My eeePC is languishing in pieces on my desk now that I have the Acer.
