Is there any sound recording program that lets you hear what you are recording? Or is there some setting in ALSA (pulseaudio) that would enable this.

A google search of 'alsa echo audio input' might give you some pointers, faqs and so on.

My search yielded an 'alsamixer' tool - assuming you have this installed have you tried playing with it?
