I have done some research on this before & came across a couple projects.
One is Atunes. I have not used it or really delved deep into but it is essentially set up to be an open source version of iTunes.
One that has sparked my interest in the past & that I have used as well on my iPod is called Floola. I believe they have Linux Windows 7 mac versions. It seems to operate like iTunes (which I don' use so...I could be wrong) & the thing I like best is that you can save it right on the device so that no matter what machine you are on it will work for you. The only caveats I have found are that you do need to set the device up on iTunes first & there is some limitations on the hardware that you can use it on. It does ahave a few other features as well, like syncing to Google Calendars & a few others. One more item to note is that it is not open source. * http://www.atunes.org (looks like there are links to others players as well on their page)

It's not possible to use a recent version of itunes without VirtualBox. :( That being said, the USB support through virtualbox is much better than it used to be. I manage to sync my ipod that way without any trouble. You can even set it up to automount your ipod into the windows virtual machine. Make sure to download the closed source version of the Sun site since it has better USB support. Amarok, Rhythmbox,& Songbird all work with ipods. In fact, I would say they are all better than itunes. However you miss out on some important features like Genius playlists, the itunes store, etc... that only work with itunes. :( Anyone else with better ideas? Mike.
