I've been using XSane ( http://www.xsane.org/xsane-introduction.html ) for years with good results.

The only thing it doesn't do exactly the way I'd like it done is scanning multiple pages into one PDF. It does the action but it won't let me declare that all pages are size X (8.5x11 usually) and then force-fit whatever I scan into that size. I fix that issue by ghostscript.
