Does your boot get to as far as the grub menu? So far I have been running ubuntu 16.04 and it's OK on one of my systems. Linux 4.4.0-22-generic #40-Ubuntu
Did you notice any changes made (program installed or upgrade made just before? Sorry I have nothing specific to your issue. The Intel NUC looks neat.
