I've noticed people having sound issues while trying out Jitsi. The solution I like for debian based Linux is installing pavucontrol The full name being PulseAudio Volume Control. You should be able to see your usb headset show up as you plug in and you may want to shut off the internal sound card in case Jitsi ie. using your browser (firefox?) gets confused in what card to pick.
