I have no working knowledge of the the Max OS X platform, so I won't
really be able to help here.

What we can try is to narrow down the issue:

First you need GStreamer to work, does
$ gst-launch playbin2 uri=file:///absolute/path/to/video/file.foo

work?

The code in clutter-gst uses autoaudiosink in your case, if the
"automatic" sink is not able to discover that you are on Mac OS X, then
that can be a reason (the test above will tell you).
