To those who requested recipes - I found these while "cleaning out" my email.  Sorry I don't remember who requested them.  Hope they are helpful!

Subject: weight gain recipes

 Pancakes
1/2 cup pancake mix
1/2 cup vanilla nutritional energy drink supplement such as Prosource
1 large egg
1 tbs. canola oil
(makes 6 cakes)
griddle at 400 degrees and grease griddle with butter.
Top with fresh fruit of sliced bananas
 
Loaded Potatoes
32 ounces of frozen hash brown potatoes (bake 15 minutes at 350 degrees)
then  sprinkle with 2 cups cheddar cheese
next pour the following mixed ingrediants over the above
2 large eggs
3 large egg whites
2 cups milk
4 tbs. butter
salt & pepper to taste
1/2 tps. onion powder
1/2 cup plain yogurt
Return to oven and bake 30-40 minutes longer
Makes 6 servings
