You can make a symbol with the name "+1" by using the symbol function: (symbol "+1"). It would probably be easier to use such symbols if you could use the r7rs vertical bar syntax: |+1|, but I don't like giving up vertical bars for such a rare (and kind of silly) situation. I've never seen any use of these || symbols in real code even in CL.
